Rabbit
The rabbit is one of the 12 animals representing the twelve earthly branches (the chinese zodiac cycle), used to symbolize the year in which a person is born.
It is also a Daoist symbol of immortality. According to legend, a moon hare (rabbit) lived on the moon together with Chang er. It was tasked with preparing the elixir of immortality from the bark of the cassia tree with a mortar and jade pestle.
